Yesterday's Easy and Quick Nutrient-Dense Lunch

It's all about the nutrients!

Here's my quick delicious, nutritious, vegetarian and organic lunch yesterday (which involved very little actual cooking), starting with the avocado and moving clockwise:

Half an avocado with sprouted sunflower seeds, chunk of Kerrygold cheddar cheese, quinoa/kabocha squash/beet/parsley salad, whole grain bread and black radish (spicy!). Seasoned with olive oil, lemon juice, lime juice, unrefined sea salt and fresh ground pepper.


Not shown is the piece of 85 percent chocolate for dessert.


That this took about 10 minutes to put together—probably how long it takes to wait on line, order and wait for a sandwich at the local deli—didn't hurt. The only items cooked were the quinoa, squash and beets, which were already in my refrigerator and I just mixed them into a salad. Everything else was simply cut, torn or poured.
